Celebrities talking to People magazine about their favorite pork chop? Because it seems rather random. Can you even remember your favorite pork chop? No matter, because if you're anything like me, you find even the most arbitrary Jonai minutia earth-shatteringly appealing. So now we can add to our stalker diaries that Joe craves Lonesome Dove chef Tim Love's seared pork chop. Good information to have for when he asks us on our first date! Here's how to prepare it: 4 (1 1/2-inch thick) pork chops, bone-in or boneless 1 gallon warm water 1/4 cup chili flakes 1/2 cup salt 6 cloves of garlic, smashed 1/4 cup olive oil Salt and pepper to taste 1. In a large mixing bowl, mix water, chili flakes, salt and garlic. Add pork chops and let sit for 1 hour in regrigerator. Remove pork chops from mixture and pat dry thoroughly. 2. In a heavy cast-iron pan, heat olive oil. Season chops with salt and pepper. Place chops in pan and cook 3 to 4 minute per side. Remove from pan and let rest for 2 minutes before serving.
